Super easy to make, this creamy avocado ice cream is the perfect soft serve treat to scoop up with Kallo’s chocolate rice cakes. Its a tasty, healthier, dairy-free alternative packed with beneficial omegas and healthy fats.
Avocado Ice Cream Recipe Recipe
Preparation time: 10 minutes
Freezing time: 2-4 hours
• 3 large, ripe avocados
• 300ml thick coconut milk
• zest 1/2 lime and 2 tbs of juice
• 175g unrefined cane sugar, or coconut palm sugar
• 1 tbs of vanilla extract
• dark chocolate rice cakes and toasted coconut flakes, to serve
Cut your avocados in half and take out the stone and scoop out the soft flesh.
Place the avocado in a food processor with the lime zest and juice, coconut milk, sugar, and vanilla extract and blend until smooth.
When all the ingredients have blended to a smooth, creamy looking texture you can add the mixture to your ice cream machine and churn according to manufacturers instruction.
Here you can either serve the ice cream out of the machine as a soft serve, which can be scooped up by chocolate rice cakes, or place the mixture in a sealable tupperware box and place in the freezer to harden, into set ice cream.
Serve either way with dark chocolate rice cakes as wafers and toasted coconut flakes.
