Tomato and Basil Salad

For the last few weeks, I have been staying at my dad’s house on the North End Road. It has been great living here. Its such an easy commute into Cordon Bleu HQ and just a stones throw away from a massive array of international supermarkets and a great weekly market, with stalls piled high with fruit and veg. Today I finished early at school and managed to catch the stalls just before packing up time. After a full day of cooking, I was planning on making something super simple and quick, to eat in front of a newly recorded episode of Mad Men. I had a Chicken Leg in the fridge, waiting to be cooked, a couple of Seeded Rolls leftover from last weekend’s trip to Borough Market that needed using. All I needed was a colourful accompaniment. The ripe plump Tomatoes were winking at me.
The overflowing Basil pot made it a no brainer. It had to be the old classic, Tomato and Basil Salad. Sans the Mozzarella, unfortunately.
This simple salad that took 5 minutes to prepare. It was really nice stuffed inside the bread roll with the Chicken, but be careful if you are a messy eater like me. I got Tomato Juices all over my chin. Only Don Draper witnessed it though, so it was ok.

Ingredients
(serves 3-4)
  • 3 large, ripe Tomatoes
  • a small handful of torn Basil
  • a squeeze of Lemon
  • 2 tbs Extra Virgin Olive Oil
  • a pinch of Chilli Flakes(optional)
  • Salt and Pepper
Method
Chop the tomatoes into quarters
Roughly tear the basil
Dress with the ev olive oil and lemon.
Season with salt and pepper, toss to mix and serve.
