I first came across the joys of a Scrambled Egg and Cheese Sandwich after recovering from a boozy night, and was immediately convinced that i had found my ultimate hangover cure… That was until in a moment of nostalgia i made it again – this time with the addition of a spicy leftover Sausage, Tomato, Chives and Paprika and Mustard Mayo. At first i thought this might be overkill, my intentions were not to mask the light flavour of the Egg, but to add to the flavour and make an overall more meaty sarnie. The great earthy heat of the Mustard and Paprika Mayo added creaminess with a kick, the Chives brought over the flavour of the Egg and the Sausage did what a spicy good Sausage does best – add some MEAT. My taste buds were zinging and my tummy was full – it was a happy meal! So naturally i made another to make to make all the boys in the house even more jealous.
- 2 slices of Spelt Bread, toasted
- 2 Eggs
- 2 tsp Chives, finely chopped
- 50g Chorizo, finely sliced
- 1 tablespoon Mayo
- 1/2 tsp Mustard
- 4 thick slices of Mature Cheddar
- a handful of Lettuce Leaves
- 1 Tomato, finely sliced
- a knob of Butter
- Salt and Pepper
Fry the disks of chorizo in a dry pan over a medium heat for a minute or two on each side. Turn them out of the pan and set aside.
Crack the eggs into a bowl, add the chives and season with salt and pepper and add a tablespoon of water before mixing – sounds odd but the water keeps the eggs fluffy.
Put your chorizo frying pan back on the hob, over a medium heat and add a knob of butter
Pour the eggs to the pan, keep stirring until cooked.
Meanwhile toast your bread
Spread your toast on both sides with mayo and mustard. Layer up the sandwich with the cheddar, add the egg on top, then arrange the chorizo on top of that, finish with the tomato slices and lettuce leaves. Top with the over piece of toast, slice and serve.
Try to eat it without a mess… i bet you can’t.
