The sun might have gone, but i’m not giving up on summer breakfasts, especially ones as speedy and delicious as this one.
For this tasty light breakfast/ tasty snack, the papaya acts as a bowl for the fillings. On top I have added some cereal and a combination of my favourite topping ingredients, including chopped banana, honey and yoghurt – you can use regular yoghurt if you want, but I prefer the taste of coconut with tropical fruit.
Here I have used acai powder to give the yoghurt a rich purplely colour, purely for the aesthetic. If you don’t have it, don’t worry, you can use strawberries, blackberries or blueberries blended with yoghurt for a similar effect.
Vegan Papaya Breakfast Bowls
- 1 papaya, halved and deseeded
- 4 tablespoons tasted buckwheat, granola or muesli
- 1/2 banana
- 4 tablespoons coconut yoghurt
- 1 teaspoon acai powder, optional
- honey, to drizzle
- tahini, to drizzle
Halve the papaya and hollow out the black seeds.
Add your chosen cereal, either muesli, granola or toasted buckwheat works well here. You need something with a nice crunchy texture.
