Fish Tacos with Slaw and Pumpkin and Jalapeno Salsa

These spiced, healthy Grilled Fish Tacos are loaded with all sorts of goodies. The fresh cabbage and apple slaw adding freshness and herby pumpkin and jalapeno salsa a hot tang to this light and easy recipe

Cooking time: 10 minutes

  • 700g firm white fish (sea bass, tilapia, red snapper)
  • 1 tablespoon baharat or Mexican spice mix
  • Cabbage and apple slaw
  • 300g/ approx 1/2 red cabbage thinly sliced or shredded
  • 200g thinly sliced/ shredded apple
  • 1 red onion
  • ½ teaspoon sea salt, more to taste
  • ¼ cup thinly sliced red onion, more to taste
  • ½ cup chopped coriander( packed), ½ of a large bunch
  • ¼ -½ green chilli or jalapeño, finely chopped, more to taste
  • ¼ cup fresh lime juice, more to taste
  • 2 tablespoon olive oil

Pumpkin and Jalapeno Sauce – Makes 1 jar

  • 250g pumpkin seeds
  • 200g pickled jalapeños (reserve the pickling vinegar)
  • 1 small onion, chopped
  • A bunch of coriander, finely chopped
  • A bunch of parsley, finely chopped
  • Olive oil
  • Juice of 2 limes
  • Additional garnishes: Lime wedges, avocado slices, sour cream and coriander leaves

Fish Tacos with Slaw and Pumpkin and Jalapeno Salsa

Method

Step 1

To make the sauce

Toast your seeds in a hot pan until fragrant, then soak them in the jalapeño pickled vinegar.

Dice the onion and fry in a little oil until its soft, then set aside 

Put the soaked seeds, onion, jalapeño pickles and herbs in a food processor with a drizzle of olive oil, and whizz. Add lime juice to loosen it all up and get the desired consistency.

Step 2

Place the shredded cabbage and apple in a medium bowl. Toss with the salt. Add the onions, coriander, jalapeño, lime juice, olive oil and toss well. Adjust lime, salt and jalapeño if needed – you want this to taste tangy

Rinse and pat the fish dry. Place the fish on a plate and rub spice, oil and salt over the fillets. Set aside.

Grease the grill before placing fish on it. Turn heat to medium. Grill each side a few minutes, letting grill marks develop and use a metal spatula to flip.

 

Step 3

Lightly brush the corn tortillas in oil and then quickly grill them on a gas hob, to soften

Assemble tacos by placing fish in the tortilla, top with slaw and an optional avocado slice.  Drizzle with the pumpkin and jalapeno salsa and serve with any additional condiments
